Who invented orecchiette pasta? There are many legends, but the truth is quite unknown. On the basis of the areas in Puglia there are different size and names of orecchiette pasta: in the area of Bari there are the so called “strascinaet” (the dragged pasta), in the area of Brindisi they are known as “recch d’i prevt” (the ears of the priest)  and in the area of  Taranto they are “chiancarelle”.

Regarding their invention: in Bari, the most accredited theory refres to a 16th century document, found in the archives of the Church of San Nicola, in which a father donated his bakery shop to his daughter. In this way the daughter’s ability to prepare the ‘recchietedde’  (little ears, in dialect) was like as a double dowry. Other sources believe that the birth of this famous pasta dates back the ancient Romans. Further documents refers to the French – exactly the inhabitants of the Provence area – and how this culinary art was exported by D’Angiò family in 1200 into Puglia.


When we talk about pasta in Puglia, we refer to legendary orecchiette. Mrs. Maria will teach you all the secrets to make typical Apulian dishes following the most traditional and genuine recipes. During this experience you will not only have the opportunity to see a pasta maker and learn information, but you will be the real protagonist by putting your “hands in the dough”. It will be a unique experience in a suggestive location, a farm among the authentic nature and tastes. The cooking class will end with a tasting lunch.

The price does not include: transfer, tips and anything not expressly included

Reservations: accepted up to 48 hours before the scheduled date, depending on the available places

Cancellation: free within 48 days prior to the booked activity. For cancellations within 24 hours of the booked activity, 25% of the amount paid will be retained as penalty and the remaining part refunded.

Minimum number of 8 participants to activate the weekly sensory guided tour.
